Chicken Teriyaki

Chicken teriyaki has always been a favorite in my home. We've had Kikkoman Teryaki Marinade where we have marinaded the chicken in the marinade from the supermarket. I believe I made another teriyaki recipe from someone else online. Now I have this recipe, which is old which I do not even know where it originally came from. Almost all these Asian recipes do seem to have one thing in common - Sherry.

This recipe, just to let you know is written for the broiler, but you, of course, may obviously, also cook it on the grill. It is considered a very might summer recipe, excellent to be served with salad, perfect for Memorial Day Weekend!

For this recipe you will need:
a whole chicken, cut into pieces, or 2 and a half or 3 lbs chicken breasts, thighs, drumsticks, or whatever you like
1/2 cup soy sauce
1/4 cup sherry
1 tablespoon granulated sugar
1 garlic glove, chopped
1 teaspoon ginger
Vegetable oil for oiling roasting pan or grill
Place the chicken pieces into a shallow pan or a marinating pan along with the other rest of the ingredients and marinate in the refrigerator for two hours or more.
I placed the chicken pieces in a shallow pan. Turn the at least once if you do put them in the pan. Place the chicken in the refrigerator while the chicken marinates.
After the two hours has passed or when you are ready to broil or grill the chicken. Oil the broiler pan or the grill with the vegetable oil. If broiling, broil the chicken 5 to 6 inches away from the broiler unit. Broil until 8 minutes on each side, basting frequently. Cook until chicken is cooked through.
Here they are fresh out of the oven.
The chicken was excellent, as the recipe was easy, but then you can always count on most marinating recipes to be easy.

Mustard Glazed Salmon


Mustard Glazed Salmon is such a delectable delight. How can you go wrong with this fish. If you enjoy mustard and maple syrup you will enjoy this very fast and easy dish. Here is the recipe---


MAPLE GLAZED SALMON Number of servings: 4-6
FROM THE BETTER RECIPES WEBSITE...
4-6 salmon fillets or steaks ½ lime, juiced
Salt and pepper to taste ¼ cup pure maple syrup
½ tsp grated fresh ginger ¼ cup Dijon mustard
½ lime, zested 1 tbsp olive oil
Check salmon fillets for bones and remove any you find. Preheat broiler. Mix all sauce ingredients and heat in microwave to meld flavors. Salt and pepper salmon and cook under broiler (on a broiler pan) for 5-8 minutes, depending on thickness of salmon. During the last 3-5 minutes, apply sauce with a pastry brush. Apply as many layers of sauce as you wish to achieve the appropriate amount of glazing.
Notes: The glaze has maple syrup in it and if you use a heavier glaze it should be cooked lower in oven to avoid burning the maple syrup.

This recipe was so easy and I enjoyed that it has fresh ginger and lime. The one item I changed was the maple syrup. I used the run of the mill Mrs. Butterworth's Maple Syrup.

Salmon for Dinner from Giada


My dinner tonight thanks to Giada and a sale on salmon at my local Stop and Shop. It has a nice mustardy glaze. I served it with rice made with chicken broth and parsley and a green bean casserole. It can be made in under 20 minutes. It cooks faster than rice.
The salmon was tasty with that mustard flavor. It is very simple and doesn't take long at all to make. 
Here is the recipe. 

From Giada's Family Dinners
Serves 6

Ingredients:
2 garlic cloves, minced
2 tbsp. Dijon mustard
2 tbsp. whole-grain mustard
3/4 tsp. finely chopped fresh rosemary
3/4 tsp. finely chopped fresh thyme
1 tbsp. dry white wine
1 tbsp. olive oil
Nonstick olive oil cooking spray
6 (6-to-8 ounce) salmon fillets
Salt and freshly ground black pepper
6 lemon wedges
In a small bowl, mix the garlic, both mustards, rosemary, and thyme. Mix in the wine and oil. Set the mustard sauce aside.

Preheat the broiler. Line a heavy rimmed baking sheet with foil and spray the foil with nonstick spray. Arrange the salmon fillets on the baking sheet and sprinkle them with salt and pepper. Broil for 2 minutes. Spoon the mustard sauce over the fillets. Continue broiling until the fillets are just cooked through and golden brown, about 5 minutes longer.

Transfer the fillets to plates and serve with lemon wedges.
