English Muffin Toasting Bread

I started a journey of bread when I baked my first loaf of bread. I may have had to make the same loaf about eight times to reach perfection with the yeast but I finally accomplished it. This time I decided I wanted to make an English muffin loaf because I love English muffins. The best bread is sometimes the one that goes into the toaster. It was a lot of fun making the Homemade Cinnamon Bread, so I wanted to have more of the experience.
So I decided to make Bright Eyed Bakers version of the English Muffin Toasting Bread. It was very easy to make and excellent toasted with butter.
This bread only required one rising.
It was very easy.

Toad in the Hole

Toad in the Hole - a dish my mother started serving when I was in junior high school made with Yorkshire pudding and pork sausages. I made it for breakfast recently, but it was normally served onion sauce and vegetables, at least according to wikipedia.
Here is the cookbook -Recipes From Many Lands published by the Saturday Evening Post. The copyright date is 1979.
Here is the recipe. It takes about 1 hour and 15 minutes to make. All that is really required is that you make the pudding and put in the refrigerator for an hour, While the pudding is in the refrigerator brown the sausages. Preheat the oven, and although this is not recommended in the recipe, it was recommended on wikipedia that you place the pan in the oven for 15 minutes to warm . When the pudding is finished, pull the pan out of the oven, place the sausages in pan, pour the Yorkshire pudding over and place in the oven for a half an hour. If you don't have a 6 x 10 x 2 inch pan, you can go a little smaller and just cook the toad in the hole a little longer.
Here is a single serving.

If you have the heart of an Englishman, I would make this meal. The prep for the meal is easy.

Life After the Holidays

I have been busy but not in the normal way since the holidays. My cousin moved from Los Angeles to New York City by way of Connecticut to be closer to family so I have been cat sitting. Here is a picture of the lovely little guy.
I have never had a cat as a pet before but apparently I am really a cat person. His name is George. My cousin wants to change his name, so he has picked up the name Leo. My sister-in-law came up with the name because he looks like a lion. I pet him all I can and he sits on my lap and gives me kisses and love bites.

My boyfriend's mother came to live with us and we are working with in house hospice. She has a live in aide.

I have written articles on Feedly, an extension that can be used on Google Chrome and Mozilla Firefox, and Inside PR, a podcast I listen to.

I do have plans to Marmalade Morning Muffins.

Enjoy new experiences and try new things.

Getting Back into the Swing of Things

It has been slow getting back into the swing of things. It is hard to believe that I haven’t written since before Thanksgiving.

I downloaded a journal, which I started using. I like the setup because it allows for compartmentalization. It also allows me to put in info about the weather.

For Christmas I took my mother to see Mamma Mia! At the Bushnell thanks to Quinnipac University. It was absolutely excellent. I loved to see the dancers dance and boy can they jump. Everyone cheered and there was a standing ovation.

That same week my Mother volunteered at the Ivoryton Playhouse and saw The Greatest Christmas Pageant Ever. It was fun with all the kids performing.

The next day I went with my Mother to visit Mark Twain’s house in Hartford. Upon entering the house we were greeted with carolers. In the museum entrance they have a Mark Twain made out of LEGO®, and in another room they had his home made out LEGO®. It was beautiful and full of so much detail work from the wood to the stenciling.

We then went to the Harriet Beecher Stowe house which was right next store. Her life was amazing. Her husband was a professor and she was home raising her kids, but she wanted to make some money on the side so she wrote books. In 1852, Uncle Tom’s Cabin was published and she made $10,000. Because of her work there was the underground railroad into Canada.

For the holiday I made a number of recipes. For thanksgiving, I went to my boyfriend’s brother’s home in New York. I brought as a gift a Cider Pumpkin Bread.

And here is the recipe which I found in the 12th Anniversary A.R. Mazzotta

I also made a Cranberry-Orange Brie which I do not have a picture of but is a family favorite.

I made Salmon Dill Dip for the company party. For my brother's birthday on Christmas Eve I made Ultimate Fudge Brownies. They are a cake-like brownie.

This recipe came from The Brownie Experience Cookbook by Lisa Tanner. Here is the recipe.

These brownies were a hit!!

That is all for now.

Be adventurous in all things!
